I love salads all year round. They make great side dishes, entrées or even light meals with some crusty bread. In my opinion these are the best salad recipes from around the world.


Insalata Caprese Italy

Insalata Caprese is my favourite summer salad, as it’s only worth making when you can get delicious ripe tomatoes. Use delicate buffalo mozzarella, not rubbery tasteless cow’s milk fior di latte, and assemble it an hour or so before serving – its best at room temperature.


Potato Salad Germany

Potato salad is my go-to dish for barbecues and any family gathering as it travels well and is delicious with virtually everything. Use a waxy potato that won’t disintegrate and add plenty of hard-boiled egg and peppery chives. Crisp pancetta is optional (I love its salty punch).

Coleslaw travelled to America with Dutch immigrants (‘koosla’ is Dutch for ‘cabbage salad’) and is now popular everywhere, especially in the South. It keeps well, even improves after a day or two, and lends itself to variations including a bit of spice. It’s great picnic fare.

This delicious salad keeps well for days in the fridge as there’s no delicate leaves to wilt. Add black olives and Feta for a classic Greek salad, or toss in anchovies, red capsicum, dill, oregano or any other herb you fancy. This is one of the best salad recipes to serve with grilled meats.

This simple salad from the city of Lyon is one of my favourite entrées. Tender frisée leaves are tossed with crisp speck, croutons and a warm mustardy dressing, then topped with a poached egg so the runny yolk can bring it all together.
