Being married to a Swiss, Switzerland has a special place in my heart and recipe collection. Swiss food is unique and distinctive while sharing some influences with neighbouring Germany, Austria, France and Italy. Here are some of my favourite Swiss recipes.
Many Swiss think of rösti as their national dish. The Swiss equivalents of hash browns or potato lakes, this Swiss potato cake is popular in both the German-speaking and French-speaking parts of Switzerland. It’s a great side dish to any of Switzerland’s saucy dishes, such as Zürcher geschnetzeltes and also a great vegetarian main course topped with a fried egg.
Fondue is probably the best known Swiss dish outside Switzerland. This dip of molten cheese is served all over Switzerland with slight variations from region to region. Note that in Switzerland fondue is always cheese, dipping fruit in melted chocolate is something only the tourists do!
Switzerland has many famous recipes including Zürcher geschnetzeltes (veal in cream sauce from Zurich, but now served throughout the country), gerstensuppe (hearty barley soup), fondue, rösti, spätzli and nusslisalat to name a few. On the sweet side of things, chestnut vermicelles (called Mont Blanc in French) and Läckerli (especially Basler Läckerli from Basel) are popular. And everyone enjoys a kaffee fertig at any time of day.
