For many of us, one of the highlights of winter is truffles. But it wasn’t always so in Australia. On 18 June 1999 Duncan Garvey harvested Australia’s first Perigord black truffle in Tasmania. Since then truffles have also been cultivated in NSW, ACT, WA, SA, Queensland, Victoria and New Zealand. While some people are captivated by the funky, earthy aroma from the first whiff, others take a while to understand the allure. Either way, it’s hard to resist the theatre of a waiter opening a jar containing a small black nugget to allow diners to inhale the scent, before serving it tableside using a special truffle shaver. At around $2,500/kg, truffles are an indulgence, but a little goes a long way and a small one (enough for 6-8 people) only costs around $120 (with delivery) from Fish River Truffles near Bathurst (use code Roberta20 to save 20%); a great way to add a special touch to your next dinner party. To make the most of truffles, keep it simple and remember they need warmth and fat to bring out their aroma and flavour. This easy dish of fettuccine with black truffle ticks all the boxes. As for a wine match, I love the synergy between truffles’ earthiness and an elegant pinot noir, such as those from Curly Flat in Victoria’s Macedon Ranges.

Serves 6 as a starter

Ingredients
  • 600g fresh egg fettuccine (1lb 5oz)
  • 150g unsalted butter (5oz)
  • 100g freshly grated parmesan (3½oz)
  • 100g fontina, diced (3½oz)
  • 1 x 40g black truffle (1½oz)
Method
  1. Bring a large saucepan of well-salted water to the boil, using 10g salt/litre water (⅓oz salt/2 pints water).
  2. Cook pasta for a couple of minutes, until just tender.
  3. Meanwhile, melt butter in a frying pan.
  4. Drain pasta, reserving some of the cooking water.
  5. Add pasta to the frying pan with parmesan, Fontina and a couple of tablespoons of the cooking water and toss to combine well.
  6. Transfer to warmed warm serving bowls and shave truffle liberally over the top.
  7. Serve fettuccine with black truffle immediately.

Had so much fun at the truffle forage weekend. Loved meeting truffle farmers Lisa and Carmine, and Frank was such a beautiful hard working truffle puppy. Everyone seemed to get into it, with soil sniffing and digging like kids in the dirt for our buried treasure. The final lunch was a beautiful way to end the weekend. Food was amazing and plentiful. The truffle forage was an unforgettable weekend. It’s obvious the winemaker, restaurants and the truffle farm pulled out all stops for Roberta’s tours. The meals were feasts, winemaker tapped barrels for us, and we dug for and found plenty of truffles at the truffle farm. The other travellers were great company.

I went on Roberta's truffle weekend. She was amazing – great communication skills, friendly and knowledgeable. The truffle forage hosts were lovely with a wealth of knowledge and experience. The truffle dog was gorgeous, we found lots of yummy truffles and were given a generous discount on purchases at the end plus a gift of some truffle salt. Meals were amazing, lots of truffle at dinner and so many delicious dishes at lunch. We were well looked after. This was a well thought out and planned weekend and I would definitely do it again.
