This time in the edible garden at Jose Silva’s casual Petersham diner, Lunas, with a menu inspired by the artisanal Spanish charcutería of La Boqueria.
Jose will prepare a 5-course menu showcasing La Boqueria’s artisanal charcutería alongside some of their premium imported Spanish foodstuffs and Nelson will match traditional Portuguese wines to each course.
What the Spanish call embutido, the Portuguese call enchido, and while both countries have distinctive cuisines they also have a lot in common. Jose uses Emile’s chorizo for his popular chouriço à bombeiro (flaming chorizo), which will of course be on the menu, and loves other La Boqueria smallgoods and imports, like the naturally-brined Losada olives from a small producer in Seville.
