We’ll visit Barbados for his Mom’s fried chicken with green seasoning, the Spanish-influenced Dominican Republic to feast on traditional empanadas and prawns in a spicy tomato coconut broth, then Jamaica for a delicious snapper escovitch, before a do-ahead pan-Caribbean BBQ perfect for relaxed summer entertaining.
