Join me at Vannella’s new caseificio (dairy) in Marrickville for a behind-the-scenes tour and tasting. We’ll meet Vito Minoia who celebrates 50 years of cheesemaking this year and now works alongside his son Giuseppe and granddaughter Martina in the state-of-the-art caseificio they opened late last year.
We’ll watch as they cook cauldrons of hot whey to reveal clouds of delicious ricotta and stretch curd into luscious silky mozzarella that’s then filled with creamy stracciatella and tied with a knot to make their famous hand-crafted burrata.
After the tour we’ll head to Petersham (10 minutes’ drive) for a casual seafood lunch at Jose Silva’s restaurant Fich.
