How To Segment Citrus (How To Segment Oranges)

Neat pieces of citrus fruit give dishes a professional finish. And they’re easy to create once you know how to segment citrus fruit.

The same method is used for oranges, lemons, limes, grapefruit and almost any other citrus.

Citrus segments can be used in sweets, salads and other savoury dishes as well as for garnishes.

The peel doesn’t need to be wasted either, it can be used to make orangettes.

You’ll need:

  • a sharp knife
  • a large bowl

Here’s how to segment citrus fruit (scroll down for a step-by-step video):

  1. Using a sharp knife, cut the top and bottom off the fruit to reveal the flesh.
  2. Stand it upright on a clean, dry work surface and cut down the side, following the curve of the fruit to remove all the skin and as much white pith as possible while leaving as much flesh as you can.
  3. Trim off any remaining white pith.
  4. Holding the peeled fruit in the palm of one hand over a bowl, cut down either side of each of the membranes to release the segments; dropping them into the bowl as you go.
  5. When they’re all removed, squeeze the remaining membrane over the bowl to collect the juice to use in the dressing or sauce.
