If you’re making mayonnaise or aïoli and it breaks or splits it will look curdled with the oil separating from the mixture.

This is more likely to happen if the eggs are too cold or the oil is added too quickly.

But all is not lost, you can almost always fix a broken mayonnaise.

You’ll need:

  • 1 egg yolk
  • a whisk (or food processor)

Here’s how to fix a split mayonnaise or aïoli (scroll down for a step-by-step video):

  1. Place an egg yolk in the bowl of a food processor or the jug of a stick blender.
  2. With the motor running, slowly add the split mayonnaise to the egg yolk and mix to form an emulsion, just as you did when adding the oil to the egg yolk to make the first emulsion.
  3. This also works if whisking by hand.
