Short Pasta

I’m sure there are more short pastas than any other type, and many have several names. Penne (smooth lisce and ridged rigate), fusilli, rigatoni, orecchiette (little ears) and cassarecce (also called strozzapretti) are all great with chunky sauces that can cling to them and nestle in their hollows.
