While it hasn’t been legal to sell or consume wine in Iran since the 1979 Islamic revolution, archaeological evidence shows it was one of the earliest wine producing regions with a viniculture tradition stretching back thousands of years. The southern city of Shiraz is said to be the ancestral home of the grape of the same name. Persian food marries very well with wine, especially fuller bodied whites and reds with rounded complexity to match the rich, bold favours.

Menu 1 – Borgo Magredo Sauvignon 2019, Grave del Friuli DOC
This sauvignon blanc from northeastern Italy is one of the most food friendly wines I know. It has a lovely floral nose and full, round palate with a trace of herbal notes to match the frittata and enough acid to marry with the barberries in the main course.
Menu 2 – Podere don Catado Negroamaro 2019, Salento IGT
This medium-bodied red is all dark fruit and cigar box, a great match with the earthy spices in the lamb braise. I think I even detect a hint of rose petal echoing that in the advieh spice blend.
Menu 3 – Domain Road Vineyard Defiance Pinot Gris 2022, Central Otago, NZ
This delicious Alsatian-style pinot gris has a touch of residual sweetness to balance the orange sauce and enough body to wrap around the salmon. There’s a trace of bitterness on the finish that I love too.
Menu 4 – Wills Domain Mystic Spring Rosé 2022, Margaret River, WA
Made from free-run shiraz juice, this pale pink rosé smells floral but tastes completely savoury. It has good acid levels to refresh the palate between spoonfuls of the rich soup and to match the tangy yoghurt dip and grilled tomatoes with the lamb kebabs.
