Chiyo Shuzo ‘Shinomine Kimoto’ 2020 (Nara)
A fresh, drier style of sake with refined acidity that will complement the beef tataki without overpowering the more subtle flavours of the various types of sushi.
Moriki Shuzo ‘Suppin Rumiko no Sake’ 2020 (Mie)
Rumiko Moriki, one of Japan’s first female Toji (master brewers), has created a sake that will pair well with the mild sweetness of prawn and the savoury elements of both the okonomiyaki and the agedashi tofu.
Kidoizumi Shuzo ‘Hakugyokuko’ 2020 (Chiba)
This sake has great body and depth with initial sweetness opening up to a more savoury finish, especially paired with flavours like teriyaki and miso. Its refreshing acidity will enhance the chirashi-zushi while letting the flavour of the fresh seafood shine.
Miyako-Bijin ‘Usagi’ 2021 (Chiba, Awaji Island)
Miyako-Bijin’s Usagi is a real umami bomb! Dangerously easy to drink with the salty/savoury goodness of fried pork katsu and miso soup.
