The inspiration for this delicious sweet ladies fingers recipe comes from my friend Janni, who uses the same technique to make simple savoury snacks filled with anchovy, feta or olives. These crisp baked filo ladies fingers are similar to the Cypriot pastry daktyla, though filled with dates and almonds rather than the traditional almond and cinnamon mixture. As with Janni’s savoury fillo fingers, you can use whatever combination of dried fruits and nuts you like to create your own sweet ladies fingers recipe. I don’t have a very sweet tooth and I love the contrast of the salted butter and subtle sweetness of the icing sugar in these date and almond ladies fingers; if you prefer a sweeter flavour add some castor sugar to the filling.
