Fang is from the north-western Chinese region of Xinjiang, where chilli sauce is made in a similar way to the better-known Sichuan chilli sauce. Both are based on ground dried chilli, sesame seeds and oil and separate into delicious layers of sediment and oil, giving you two products for the price of one.
Use it to make strange-flavoured dressing for bang bang chicken, to drizzle over dumplings, or spice up steamed rice. Once you’ve tried it, you’ll never be without a jar of Fang’s house-made sauce in your fridge.
