In Lombardy polenta is on the table at almost every meal and before Christopher Columbus brought maize back from The Americas that polenta was polenta taragna, made from local buckwheat. Today it’s a mixture of cornmeal and buckwheat that makes for a simple delicious dish topped with crumbled sausage meat, mushrooms or just about anything you’d make a pasta sauce from.
