I love this classic Chinese dish of black bean chicken with crispy noodles. The combination of salty black beans, spicy chilli and slightly sweet smoky oyster sauce is delicious and, while you could serve it with plain steamed rice, the crunch of crispy noodles takes it to the next level. Buy Dongguan rice vermicelli noodles if you can find them, I use Golden Swallow brand. Serve an East West Salad inspired by Cheong Liew on the side for a real treat (see video below). A soft pinot noir is a great match for the complex flavours of chicken with black bean sauce and Devil’s Corner in Tasmania makes some delicious ones, their flagship pinot noir has great flavour at a surprisingly affordable price.
