Join me at the Vannella Cheese caseificio (dairy) in Marrickville for a behind-the-scenes tour and tasting.
We’ll meet Vito Minoia who celebrated 50 years of cheesemaking this year and now works alongside his son Giuseppe and granddaughter Martina in the state-of-the-art caseificio they opened in 2022.
We’ll watch as they cook cauldrons of hot whey to reveal clouds of delicious ricotta and stretch curd into luscious silky mozzarella that’s then filled with creamy stracciatella and tied with a knot to make their famous hand-crafted burrata.
After a guided tasting and visit to the Vannella shop to stock up on fresh cheese, we’ll head to Petersham (10 minutes’ drive) for a casual seafood lunch at Jose Silva’s restaurant Fich.
